Manchego Viejo

Aged for 12 months

General information:
Origin: La Mancha, Spain.
Strength: Semi-hard
Taste: semi-dry with a long lasting herbs  & spice taste.

Fat content: raw sheep milk. 50% Fat in dry matter= 25% fat
Season: all year.

 

 

Wine Pairing:

fruity dry Whites, or Spanish Rioja, a Merlot or Cabernet.

Description:

Cheese called Manchego cheese is that which is prepared in the natural district of La Mancha (the land of Don Quixote), made exclusively from raw or pasteurized Manchega breed sheep's milk with a maturity period of at least sixty days. In case it is produced with raw milk the cheese is known as "Artesano" (Artisan).

Laurent Bonjour's Mancha Sandwich

Serves: 1 persons.

Preparation Time: 5 to 10 minutes.

Ingredients:

Preparation:

on one slice of rosemary bread, spread the roasted red bell pepper then position the slices of the Serrano Jamon, follow by the Manchego cheese and topped it with some freshly grind black pepper then finish it by set the second slice of bread. Place it on a plate with a green salad.  it’s simple fast but so good.
